I challenge! I've been thinking about this for quite some time, (you just gave me reason to write it all.) While I generally like what you put, I believe wholeheartedly that she would be a sorcerer. (Perhaps even unaware of her internal magic.) Because:
You decide to become a wizard in DND; while Shelby was born, and destined, for magic. That is clearly not the case for the other witches: while WC Joey was born with magic, WC Scott, Lauren, and Prismarina all definitely weren't. (I'm unclear about the others. But the term of "witch" seems to be incredibly loose.) So, Shelby was born with magic, yet still went to a school for witches, and that is all fine and good. HOWEVER, she was a horrible student, making mistakes and etcetera. She is clearly dedicated to the craft, yet she keeps failing. What if she wasn't being taught for her class of magic? And later on, she was able to open a multi-dimensional rift *on accident*. That is someone with substantial raw power. Warlock is out of the question, except when she was possessed by sculk. It gave her power, which is the whole identity of a warlock. But she already had power, she just seemed to have gotten better control over it, seemingly increasing what she already had. ANYWAYS, she also had a vision at one point, if I remember correctly, of the gnomes when she discovered the heart of the Evermoore and the portal there: more of a sorcerer trait. "The fog claims souls and those who go in there are don't come back out", well maybe the fog kept her alive because it sensed her magic. Maybe the sculk couldn't claim her as fast as it claimed Cub because of her internal magic trying to fight it. Or maybe that's why she still had some control and was able to feel the pain of the voices instead of being completely numb like promised. There are probably other things I'm missing... Oh well.
So, based on the information I gathered and remember, I'd say that Great Witch Shelby is a sorcerer, behaving as if she is a wizard.

fWhip and Lizzie meet up twice a week, once in Animalia's berry shop and once in the Goblands tavern.
They both invented a new drink specifically for their friend. fWhip made a pork chop smoothie with berry decorations on top for Lizzie and Lizzie made a special sculk juice with raw gold leaves as decor for fWhip. They immediately became their favorite drinks.
Jimmy is actually just the spirit of season 1 Jimmy, who currently possesses an action figure.
The action figure he's inhabiting is also one of those haunted dolls they make b-rated horror movies about. It was thrown away because it was too adorable to actually scare anyone.
Similarly, Editor!Joel is just the ghost of season 1 Joel who is currently haunting season 2 Joel. To be clear, he doesn't want to do that, he was just kicked out of the afterlife. Also, season 2 Joel hates him because he actually got the girl, while he's still trying and failing with Lizzie.
Empires False never actually did anything entirely evil. The pumpkin guy who keeps stalking her, however, has committed several war crimes and continuously frames her.
Sausage has taken a few habits from Eddie, the main one is him bouncing around every time he's feeling stressed, and him scrunching up his nose to sniff the air every time he enters a new space. Some people think he's a rabbit hybrid because of it.
Katherine can easily bench press both Pirate Joe and Shelby at once. This isn't even really a headcanon considering the giant axe she wields, but yeah, she can.
Shelby drinks all of the potions she creates at least once. She's either drunk or high, like, 90% of her life because of it. No one notices because she's just always like that, so it's normal for them.
Owen is not the first llama Scott made out with.
That's what you're going to talk about on your first date?! What do the second date conversation topics look like?!?! That you killed Joey, Jimmy, and Oli? That, while drinking with an evil Sausage, you released a demon that killed your headmaster?!?!
Ever think about the fact that when we last saw the two, Katherine had no idea on how Shelby was actually cure of the skulk. She didn’t know everything with the witch academy, the voices screaming in Shelby’s head, the spirits in the fog. She didn’t know that Shelby died.
